We use quality, locally sourced ingredients from Sussex on our menu. We have great relationships with local suppliers, some of whom we have been working with for many years. They know exactly what we want and they deliver excellent produce to us every time and this ensures that the high standards we set are continuously delivered - it is a team effort, from field (or sea) to fork.
Sussex Wine
Historic Sussex Hotels sit at the heart of the UK’s ‘wine county’ – surrounded by the award winning vineyards of some of the most innovative wine makers in the world. The Sussex climate nurtures the finest English sparkling wines. Our warmer, longer summers combine with a seam of green sand and chalk running under the South Downs to create a ‘terroir’ very similar to that of the Champagne and Burgundy regions. It is the perfect environment for the holy trinity of Champagne grapes – Chardonnay, Pinot Meunier and Pinot Noir. With high levels of natural acidity, Sussex grapes deliver full-flavoured sparkling wines. Regularly challenging the wine making orthodoxy, Sussex wines have established themselves alongside some of the finest in the world. At Historic Sussex Hotels we are proud to support local wine producers, as we have done for over three decades.
